Homemade Tortillas



I have tried many store bought tortillas some horrible and some not so bad, but there's something about homemade that just can't be beat. For year's I have long for homemade tortillas like my great grandma used to make. Years ago when I first married my husband and went overseas I thought I would make them, but young children quickly occupied my time. Over time the thought had crossed my mind repeatedly yet I never took the time to do so. NOW at long last the time has arrived, I finally found the time. I don't have the same knack as grandma so it took me a little longer, but these hot fresh homemade tortillas sure did hit the spot and were a great addition to my husband's smoked Turkey fajitas.

Our Thanksgiving Feast!






This year my mother in law Debbie and her husband Brian came to our house for Thanksgiving. We were busy in the kitchen cooking away while my husband smoked a turkey. He did a wonderful job. It all turned out delicious. What a day to be able to thank God for his provision.
I hope each of you have the blessing of enjoying your loved ones and God's bountiful blessings.

This old phrase that I was taught has echoed in my mind so many times.

We each have so many things to be thankful for.

This year I wanted to share 20 things that I am thankful for (though there are many more) and challenge each of you to do the same.

1. I am thankful for my husband

2. I am thankful for my children

3. I am thankful for my mother and sisters and family

4. I am thankful for my in laws (not everyone is as fortunate as I to have wonderful in laws)

5. I am thankful for my friends

6. I am thankful for each of the Pastors and Pastors wives in my life

7. I am thankful for each of the church families who have loved us

8. I am thankful for each of the churches that were established by faithful servants that enabled me to have had and currently have places to worship my Lord in

9. I am thankful for my home (and each one that I have previously lived in)

10. I am thankful for the food I will have today and the food I have each day

11.I am thankful for the material things God has blessed me with (though they be not necessities they do make my life easier)

12. I am thankful for my previous home and the closing date around the corner

13. I am thankful for the different seasons (though I hate the cold I know it's needed and it give a change in scenery)

14. I am thankful for our military and the men and women who serve

15. I am thankful for my country

16. I am thankful for the freedoms that we enjoy

17. I am thankful for my salvation

18. I am thankful for the trials I have endured and those I undoubtedly will endure

19. I am thankful for the daily blessing, provisions, grace, and mercies the Lord gives me each day

20. I am thankful for a Lord who loved me enough to give his life for me

House Expected to Sell!!

After months of praying for God to sell our house we finally received two offers. Choosing the one that did not have a contingency we move forward with the paper work. Inspections have been done and things are going well. However, due to Thanksgiving holiday and the Tax Credit deadline our closing date of 25 November has been pushed back.
I have so many mixed emotions going through me. It's times like this that you think of the what-ifs and all the things that could go wrong. Having already moved we dealt with the issue of preparing to pay for two different living accomodations, something we simply couldn't afford to do. Yet, I stand amazed at how my wonderful LORD and SAVIOUR would already know my needs and be pleased to provide for me. He is such a good and gracious Lord and has always provided for my family's needs and has continued to grow our faith as we must patiently wait on HIM. When I stop to think of how good he has been to me I can't help but love him and desire to serve him more.

Stella's

When we got here to Nebraska we kept hearing about this place Stella's. It's been a historic stop since 1936 in this Nebraksa town and was listed "Best 100 Burger Places Across the US". As well as voted top 20 Burgers in the US by Gourmet Magazine. One day my husband came home with an tempting deal, Stella's was celebrating it's 70 plus years and second year remodeling with incredible prices from the 60's. My family and I decided to "splurge". We all got cheeseburgers with everything on it for a whopping $.45 (except my daughter who had a pork cutlet sandwich with everything also $.45), french fries for $.20 and soda $.25. Now that's eating on a budget!!

Lambert's Cafe - A Must








While traveling last month we stopped at a restaurant called Lambert's. It's located just outside of Springfield Missouri. My husband for years has talked about it and mentioned he wanted to take me to the "Home of the Throwed Rolls". When we went I figured it would be just another restaurant, but it was better. As the name suggest they throw rolls at you, when you raise your hand of course. They have genuine customer service and there portions are tremendous, especially for the low price. Lambert's is definitely a place you will want to stop and visit, but go hungry!
